Sangu Qiaotou “Highway 61 Oyster Fritter” is the third oyster fritter store in Sangu Qiaotou Seafood Street. As the store is established near the Provincial Highway 61 in 2011, it is named “Highway 61 Oyster Fritter”.

The batter for “Highway 61 Oyster Fritter” is made of flour while the filling consists of cabbage, chives, celery, and oysters. It is made by first frying the oyster fritter briefly to allow its shape to set. When a customer orders it, the fritter is then deep-fried until golden and served in pieces.

In addition to oyster fritters, “Highway 61 Oyster Fritter” also sells fried tilapia, friendfried taro sandwich, fried taro, and oyster vermicelli. The tilapia is reared in-house and is not the normal Taiwanese freshwater tilapia. There are two ways of making thetypes oyster vermicelli: the dry one and soup oneversions. For the dry onetype, the vermicelli is first blanched, while the garlic and shallot are sautéed with sesame oil. A small amount of water is added along with vermicelli and oysters, and the dish is topped with spring onion, garlic, sesame oil and served. The soup one is made by first blanching the oyster and sauté garlic and shallots with sesame oil. The vermicelli is cooked along with the oysters and served.
